Season shrimp with some salt & pepper.
Dredge in corn starch sludge.
(add one part corn starch to one part water, stir, let sit for several hours,
discard top part water carefully)
Fry shrimp twice.
Mix mayo and some sugar.
(I would add one tablespoon of sugar to a cup of mayo.)
Add mayo mixture to a warm pan.
Add shrimp, and stir quickly.
(If you spend too much time in a pan, the mayo will separate.)
